Barbarakraut, also known as Winter Cress, can often be harvested throughout the winter and into spring. It’s an ideal source of vitamins during the cold season and is great for salads, herb spreads, or as a topping for bread. The leaves have a sharp flavor, similar to watercress and garden cress, with older leaves developing a slight bitterness. To harvest, cut the leaves close to the ground to encourage regrowth.
